The art and craft of marzipan production
Marzipan begins with the finest almonds, sourced from regions like California, Spain, and Portugal, meeting strict quality standards. At the supplier's site, the almonds are blanched and peeled to remove impurities. During production, the almonds are carefully moistened again to replicate the authentic texture they had immediately after blanching, a crucial step in maintaining quality and freshness while avoiding contamination from mold or organic waste.
The prepared almonds are then blended with sugar and other ingredients in high-speed cutters. The process generates heat (up to 90°C), ensuring smooth grinding, binding, and a velvety consistency. After cooling down, it is prepared and shaped into various sizes, perfectly tailored to meet your specific preferences.
